Bread Roll Renaissance: A Delightful Cinnamon Cake Recipe for Leftover Rolls

What if I told you that this cake is :
1. Made of leftover bread
2. Takes 10 minutes to prepare and only 20 minutes to bake
3. The ingredients are super simple and you probably have them at home already
4. It tastes exactly like super fluffy cinnamon rolls
5. It is a great way to reduce food waste especially if you have kids who are extra fond of sandwiches or if you buy bread rolls regularly

Why make a cake out of bread?

Reports say that 30% of food is wasted every year. The percentage is infuriating on its own but when you consider that 828 million people around the globe are unsure of where their next meal is coming from, the 30%waste really makes you pause and think.
On the list of foods that are wasted the most, bread is number 1! with around 240 million slices being thrown away each year.

In Arabic, we have a saying (بالشكر تدوم النعم)which means: Gratitude is what makes blessings last.
So in that spirit, I thought I’d start a series here on the blog for leftover makeovers. Recipes to help us all reduce food waste. Featuring leftover bread, vegetables, and fruits. I would love to hear what you guys think of this and if there are any ideas or tips you would like to share in the comments, I would be more than happy to hear them. Bread pudding cake recipe

leftover bread rolls

1 egg
half a cup of water
1 cup sugar
1/4 cup vegetable oil
1 teaspoon vanilla
2 cubes (g)cream cheese
2 teaspoons cinnamon

for the topping, you will need
6 cubes of cream cheese
1/2 a can of sweetened condensed milk
1 teaspoon cinnamon

1. Cut the bread into 1 cm slices
2. Brush a cake pan or a springform pan with oil
3. In a blender blend the remaining ingredients till smooth, transfer to a deep bowl
4. Dip the bread slices in the mix and arrange them in the pan

5. Blend 6 cubes of cream cheese with 1/2 a can of sweetened condensed milk (the can that I used is 395 g)
6. Pour 1/2 of the mix over the bread
7. Bake in the center of 160 C oven for 20 min
8. Use a knife to release the edges then flip the cake on the serving plate. 9. Mix the remaining half of the cream cheese, sweetened condensed milk mix with 1 teaspoon cinnamon and drizzle over the cake


The number of bread rolls used depends on the size of your pan and the size of the bread rolls. You just need enough slices to fill the pan

You can make this in a 9*13 rectangular pan or any shaped pan for that matter. I have previously cut the bread into cubes and prepared the recipe in a cupcake pan. It worked perfectly.
