Trailside oatmeal cookies

It’s February, schools are back in full swing and with school every mother faces the daily lunch box /after school snack dilemma.

The more I read about preservatives, additives, food coloring,and hydrogenated oils, the more trouble I have finding healthy options for the kids in the stores. I am the mom you see standing in the isle,reading label after label on peanut butter jars, so called healthy energy bars and cookie wrappers.

Lately I have found that it is much easier to make things at home than try to decipher all the ingredients on food labels! Even when my kids are in the mood for a treat, I know that a homemade cookie (even the occasional ones loaded with chocolate) are still better than the store bought ones because – as my six year old son puts it- (Mom’s cookies have no E’s on the label!). You see,my kids have found their own way to get through shopping faster, they count how many e numbers are on a label rather than try to read all the ingredients!

For this month’s SRC, I was assigned bcmom’s kitchen by the lovely Anna. She writes in her about segment :”In this age of fast food and busy schedules, a homemade cooked meal seems almost a thing of the past. ” her mission is to share easy tested recipes to help people make more homemade meals

As I always do when it comes to my secret recipe club assignments, I left it for the kids to decide. It was a toss up between her cinnamon rolls and her apple pecan muffins (can you tell they were in the mood for something sweet?! lol) but when they saw her Trailside oatmeal cookies, the search was over!

These cookies were a major hit with the kids. They smelled heavenly when they were baking. When they cooled they had a crisp exterior and soft and chewy center. They had a subtle hint of peanut butter. The oatmeal gave them a lovely texture and the chocolate chips were like little bursts of sweetness and flavor . As an added bonus, they had no E’s  🙂

Trailside Oatmeal Treats

Ingredients:

1-3/4 cups flour

1 tsp. baking soda

1/2 tsp. salt

1/2 cup butter, softened

1/2 cup chunk-style peanut butter

1 cup granulated sugar

1 cup packed brown sugar

2 eggs

1/4 cup milk

1 tsp. vanilla

2-1/2 cups uncooked oats

1/2 cup chocolate chips

 

Directions:

Stir together flour, soda and salt; set aside.

In large bowl beat butter, peanut butter and sugars until creamy.

Beat in eggs, milk and vanilla. Stir in flour mixture, then oats, chocolate chips.

Drop by rounded tablespoonfuls 3 inches apart on ungreased baking sheets.

Bake in preheated 350º oven about 13 minutes or until lightly browned.

Remove to rack to cool.
