The first Monday of the month can only mean one thing! Secret recipe club reveal! 🙂
For this month my assignment was Sarah’s blog (Things I make for dinner). Sarah enjoys cooking and travel. She is always on the lookout for great new recipes to try, fun new experiences to do, and finding a new place to nap 🙂 She has a wonderful collection of recipes. As always choosing just one was no easy task I bookmarked her jewelled Layered Salad and her blueberry Banana Oatmeal Muffins. I was being sensible and trying to go with healthy choices but then I came across her chocolate donut muffins and immediately knew it was the one! I mean who can resist a recipe that promises chocolate muffins that taste like Tim Horton’s double chocolate muffins?!
Chocolate donut muffins
Ingredients
For the Donuts:
1/2 cup vegetable oil
1/2 cup white sugar
1/3 cup brown sugar
2 eggs
2 cups flour
2/3 cups cocoa
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon instant coffee (optional)
1/2 teaspoon cinnamon (optional)
1/2 teaspoon cardamom (optional)
1 teaspoon vanilla
1 cup milk
For the Glaze:
1/4 cup butter
1/4 cup milk
3 Tablespoon cocoa
1 Tablespoon corn syrup
2 cups icing sugar
1/2 teaspoon vanilla
Instructions
To make the muffins:
1. Line 12 muffin tins. Preheat oven to 220.
2. In a large mixing bowl, whisk together dry ingredients (flour, coco powder, salt, baking powder, instant coffee and spices (if using) and baking soda, ).
3. In the bowl of a stand mixer, combine sugars and oil. Mix on medium speed for 2 minutes.
4. Add the eggs, one at a time, mixing well each time. Add vanilla.
5. With mixer on low, alternately add flour and milk, beginning and ending with dry ingredients. Do not overmix.
6. Fill liners 3/4 full and bake 15-18 minutes at 220. Cool completely before glazing.
For the glaze:
1. In a medium saucepan, heat the butter, milk, cocoa, and syrup until the mixture comes to a boil. Remove from heat and add icing sugar. Beat until smooth. Add vanilla and beat again.
2. Dip each muffin in the glaze before setting on a cooling rack over a baking sheet to collect drips.

مكونات
1/2 كوب من الزيت النباتي
1/2 كوب سكر أبيض
1/3 كوب سكر بني
2 بيضة
2 كوب طحين
2/3 كوب الكاكاو
1-1 / 2 ملعقة شاي مسحوق الخبز
1/4 ملعقة صغيرة من صودا الخبز
3/4 ملعقة صغيرة من الملح
1 ملعقة صغيرة من القهوة الفورية (اختياري)
1/2 ملعقة صغيرة من القرفة (اختياري)
1/2 ملعقة صغيرة من الهال (اختياري)
ملعقة صغيرة من الفانيليا 1
1 كوب حليب
لصوص الشوكولا
زبدة 1/4 كوب
حليب 1/4 كوب
3 ملعقة كبيرة كاكاو
1 ملعقة كبيرة قطر
2 كوب من السكر البودرة
نصف ملعقة صغيرة من الفانيليا
تعليمات
1سخن الفرن إلى 220.
2. في وعاء خلط كبير، نخلط معا المكونات الجافة (الدقيق، و الكاكاو والملح، والبيكنغ باودر ولقهوة الفورية والتوابل (في حال استخدامها) وصودا الخبز،).
3. في الخلاط، نخلط الزيت و السكر
4. يضاف البيض و الفانيلا
5.نضيف خليط المواد الجافه و الحليب بالتبادل مع الخلط
6. نصب المزيج في صينيه المفن و نخبزه لمده 15- 18 دقيقه
لتحضير صوص الشوكولا
1. في قدر متوسطة الحجم، يسخن الزبد والحليب والكاكاو والقطر حتى يغلي. يرفع عن النار ويضاف السكر الناعم مع الخفق حتى يتجانس تماما ثم نضيف الفانيلا و نخفق
2. نغمس المفن في صوص الشوكولا .
