Cabbage vegetable rice

 

When I went to pickup my daughter from school yesterday two boys were running down the stairs as I was going up. They were 7 or 8 at most and had mustaches drawn on their upper lips! Isn’t it ironic that all kids want to do is grow up and all we grown ups want to do is get younger.

WordPress postaday asked the question: (when did you realize that you were an adult?) about a couple of weeks ago and I have been thinking about it ever since

Most of the time I don’t feel like an adult.Especially when I’m watching cartoons or playing  hide and seek with the kids or dancing to kids songs with my little boy (dancing in my son’s dictionary is when I hold his hand and we spin around and round till we’re dizzy lol).

I do feel like or more accurately, have to act like , an adult at the clinic or else I would be out of work lol. But the question wasn’t when do you feel like an adult, it was when was when did you realise you were an adult and since I don’t seem to be able to provide an answer for that question I thought I would ask you guys..

When was the first time YOU realized that you were an adult? maybe your answers would provide a light bulb moment for me 🙂

For the longest time cabbage to me meant one of two things, coleslaw or stuffed cabbage and though I liked coleslaw I wasn’t particularly fond of stuffed cabbage.. in short I thought cabbage was  a boring bland vegetable (no offense to all the  coleslaw, stuffed cabbage lovers out there). Then I came across an article about the benefits of cabbage and I was amazed at the amount of nutrients and benefits in those greenish white leaves so I decided to look for recipes to incorporate more cabbage into my diet.  A couple of years down the line cabbage became one of the vegetables I buy on a regular basis to make Kaboska (a delicious cabbage and pepper stew that I will be posting soon), a variety of salads and today’s dish Cabbage vegetable rice. If you think cabbage is boring or bland like I used to think I encourage you to try this recipe, it will definitely change your mind. It is not only colorful and appetizing but the spices and the vegetables paired with the soft sweet cook

Cabbage vegetable rice recipe from delicious bite

1 cup basmati rice

2 table spoons olive oil

1/2 teaspoon powdered ginger

1/4 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon coriander

1/4 teaspoon cinnamon

1 teaspoon all spice

2 tablespoons soya sauce

2 cups water or chicken stock

2 cups

1/3 cup corn

1/2 cup peas

1 big carrot cut into cubes or shredded

1/4  head of cabbage shredded

1 onion

1 clove garlic

Wash the rice and soak it in warm water for 10 minutes

Saute the onions and garlic untill they start to soften.

Add the spices and stir untill the heat released the smell of the spices

Add the carrots and peas and saute for 3-5 minutes (I used frozen carrots and peas if you are using fresh ones give them longer to cook )

Add the cabbage and stir untill the cabbage begins to welt 7-10 minutes

Add the rice, soya sauce and water, allow to come to a boil then cook covered on medium low heat untill the rice absorbs all the water.

Turn off the heat and allow to stand covered for 10 minutes.

Serve with yogurt or Raita salad
