More good news to share…Vincent from petitchef.com contacted me about adding my humble blog to Petitchef which is a french based Cooking recipes Portal!! Can you believe it!

I’m super excited about this and again thank you so much..

Along with this great news I have a super yummy recipe..a mixture of smoked tuna and pasta infused with garlic oil and parsley…need I say more?

There is a secret ingredient to this salad..it absolutely transformed it from your average everyday pasta salad to a dish so delicious that my six-year-old ate half of it with intermittent oooooh ahhhh yum! when she finished she said…Mum I had no idea this was so delicious…do you want to finish your plate or can I do it! lol

The secret is…you have to promise not to tell anyone…promise? ok..it is bread crumbs! italian seasoned bread crumbs with romano cheese.. I know it sounds weird but believe me it added a whole new dimension to the salad..try it and let me know what you think..

I  for one have written it down in my recipe book . You see,I sometimes make up a recipe  or alter an existing  recipe I have and it turns out delicious..when I try to recreate it I forget what it was exactly that I did the  last time that made the recipe click! To get over  that there is always a recipe book (I have two recipe books one for trying out stuff and one for my trusted recipes), pen and paper in my kitchen drawer 🙂

This salad was delicious right away, but after letting in hang out in the fridge for a couple of hours it tasted amazing!! The flavors come together beautifully and the pasta sort of absorbs the combination of seasoning, lemon and garlic oil .

Tuna pasta salad

Pasta (I used the seashell shaped ones)

1/2 cup red beans

1/4 cup pitted olives

half a bunch of parsley chopped

1 can smoked tuna (reserve the oil)

1/2 red bell pepper chopped

1 tablespoon italian seasoned bread crumbs with romano cheese

1 tablepoon olive oil

1 glove of garlic chopped

Juice of one lemon

Heat the olive oil in a pan, add the chopped garlic. When you can smell the garlic turn off the heat and  set aside (this will infuse the oil with a mild garlic flavor)

Boil the pasta according to the instructions on the box

In a bowl mix the beans,olives,parsley, pepper, bread crumbs, lemon juice then add the smoked tuna with the oil (the oil adds flavor to the salad)

Add the pasta, drizzle with the garlic oil

Toss gently
