They were tearing down a house next to the clinic were I work today. Watching walls collapse and windows shatter, I couldn’t help feeling sad.
That house was once a home, its walls witnessed laughter, tears and countless stories.
Maybe there were kids who grew up there or maybe a couple of newly weds started their life in it or perhaps an old couple enjoyed spending the rest of their days..Whatever it was,it is no more…
Seeing an old building go down or an old shop close down always makes me feel this way. It is like a book with a sad ending, you wish it went another way but know that this is the way life is..it has its ups and downs, beginnings and endings, still you can’t help feeling sad..
My recipe today is quick,easy, colorful and YUMMY. What better remedy to left your spirit??
For the sauce,I mixed some of the california oil sauce (told you I had a jar waiting in the fridge)with a bet of ketchup. When I asked my daughter to taste it, she tasted it 4 times saying she just wanted to make sure that it was delicious then asked for some of it to dip her popcorn in!!
The chicken here is prepared with the same additions I use to marinade chicken for a mouth-watering chinese recipe I’ll post soon. Just a few ingredients transform chicken pieces completely, you’ll have to resist the temptation to pick them out from the pizza topping.
Sizzling chicken pizza
Pizza dough
California oil sauce mixed with ketchup
Red and green pepper diced
Corn
Mushrooms (fresh or canned)
mozzarella cheese
skin-less boneless chicken cut into cubes
1 tablespoon mayonnaise
1 tablespoon ketchup
1/2 tablespoon barbecue sauce (optional)
Juice of half a lemon
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon all spice
Dried oregano
To prepare the chicken, mix it with the mayonnaise,ketchup,barbecue sauce, lemon,paprika, salt and all spice.
Put the chicken mixture in a pan on medium heat untill the chicken is almost done.
Add the mushrooms and steer for 5 minutes.
Spread your dough in the pizza pan. (I like thin crust pizza, you get to enjoy the topping more)
Prick the dough with a fork to prevent it from rising during baking
Spread the sauce,sprinkle with a bet of cheese
Sprinkle the chicken, mushrooms, peppers and corn. Top with a dash of oregano.
Sprinkle with mozzarella. Don’t add too much or else you’ll cover up the beautiful colors.
Place in a preheated oven (240 c) in lower rack untill the bottom and edges are lightly golden brown then place under the broiler to get it golden on top.
