If you could choose a single super power, what would it be?
I know the question might be juvinile but in the past couple of days…(more like the past couple of years lol) I feel overhilmed by all the things I have to do every day (work, take care of the kids,supervise homework, cook,clean the house, get my daughter from school, shopping….just to name a few of my daily assignments!) that it seems that only super powers could save the day!
So if I had the chance to choose a super power it would be the power to strech…you know like Mrs incredible from the animated movie the incredibles..My head could be watching over the kids in the living room while my hands are doing the cooking in the kitchen or vacuuming the hall..or maybe the power to duplicate myself,you know one copy for work, one for the kids, one for shopping…etc. while I get to do the things I enjoy and never have the time to do. Simple things like read a book without a million interruptions, take a long bath, go shopping without an entorage that needs the bathroom or a snack at the worst possible time..
I don’t know if it is just me or is there this huge pressure on every mum to be a super woman! You are expected to have a spotless house, a five course dinner made from scratch every night, smart well manered kids, you should be stylish and fit and update with news,fashion and at least 10 other subjects and if you work then you should have a brilliant career and work long hours and be ready to come to work whenever you are needed even outside business hours!Sadly, I was absent the day they distributed the capes and super powers! and as a result I’m at a constant struggle with time. Even when it seems I managed to make ends meet, at the end of the day I realize that it was at my own expense and that (me) always comes at the end of the list.
Sorry for the gloomy post but I’m just venting after a hectic week. To make it up I have 3 recipes for you today. In the past couple of years I’ve fallen in love with arugula! It all started with a search for salad recipes that didn’t involve mayonnaise. I came across a couple of arugula salad recipes in lakii forum by a sweet lady called Samah and tadaaaa it was love at the first bite.
Arugula is peppery with the slightest bitter tang. It adds such a depth of flavor to any salad that you have to try it if you havent already. Added to that it is a wonderful back ground that allows you to experiment with ingredients and sauces.
Todays salads use one of my favorite salad dressing recipes. It works wonderfully with green salads or with steamed green beans.
My arugula salad
Arugula leaves about a bunch
1-2 Tomatoes diced
1 cucumber diced
1 small onion
olives pitted and diced
Salad dressing
Juice of half a lemon
1 table-spoon vinegar
1 tablespoon mustard
salt
pepper
1 table-spoon dried oregano
3-4 table spoons olive oil
Mix the dressing ingredients except for the oil
drizzle the oil while whisking
Mix the salad ingredients and pour the dressing right before serving
Arugula walnut salad
Arugula leaves about a bunch
1-2 Tomatoes diced
1/4 cup mint leaves
1/4 cup walnuts
Salad dressing
Juice of half a lemon
salt
1 teaspoon sumac
1 tablespoon pomegranate molasses
3-4 tablespoons olive oil
Arrange the arugula and mint in the dish.
Scatter the tomatoes
Mix the dressing,pour it right before serving .
Sprinkle walnuts.

I didn’t have sun-dried tomatoes so I used regular ones and I skipped the cheese,still it turned out YUMMY
Avocado arugula salad
Washed arugula leaves
1/2 an avocado pitted and sliced
Thinly sliced tomatoes
Pitted olives
Salad dressing
Juice of half a lemon
1 table-spoon vinegar
1 tablespoon mustard
salt
pepper
1 table-spoon dried oregano
3-4 table spoons olive oil
Mix the dressing ingredients except for the oil
drizzle the oil while whisking
Mix the salad ingredients and pour the dressing right before serving
