Since I spend most of the year complaining about the intolerable heat here in the UAE,it would only be fair to share the precious few days of good weather that we’re having at the moment.

Cloud formations that the kids and I spend the way to school weaving stories about, imaginary creatures, giant elephants(yes my son is still in love with elephants) and of course, dragons!
Today’s quinoa salad is quick and easy. It is actually one of my go to lunches lately topped with some grilled chicken or shrimp. The recipe is actually a copycat recipe for a salad we love at one of the local restaurants. The combination of colors, textures and flavors is so refreshing!
If you are still on the fence on quinoa salads or if you have tried it once and did not like it, it could probably be due to the way you cooked it. I have a little tutorial I posted a few years ago and in it you’ll find the detailed instructions for cooking quinoa and getting rid of the bitterness that so many people complain about.
Servings : 4 generous servings
1 cup quinoa
2 cups baby spinach leaves
1 cup mint leaves
1.5 cup lebanese cucumbers cut into slices
1.5 cups cherry tomatoes cut in half
6 small radishes cut into thin slices
1 avocado cut into slices
1 can chickpeas, rinsed and drained
1 cup pomegranate kernels
For the dressing
Juice of 2-3 limes
1/4 cup Olive oil
Salt and pepper to taste
Top with a drizzle of Pomegranate molasses
Instructions
Cook the quinoa as detailed in my quinoa cooking tutorial, allow it to cool
Reserve a few slices of avocado and 1-2 tablespoons of pomegranate for decoration
In a bowl place all of your ingredients, add the lime juice, olive oil and pepper. Toss gently till everything is mixed through
Immediately before serving drizzle with pomegranate molasses
Notes:
For a fun twist, you can roast your chickpeas before adding them to the salad, that will a beautiful crunch to the salad and will allow you to infuse the chickpeas with any flavor that you like

1 كوب من الكينوا المطبوخه
2 كوب أوراق السبانخ الصغيره
1 كوب أوراق النعناع
1.5 كوب خيار مقطع إلى شرائح
1.5 كوب بندوره كرزيه مقطعه الى انصاف
6 حبات فجل صغيرة مقطعة إلى شرائح رقيقة
حبه افوكادو مقطعه الى شرائح
علبة حمص مصفاه و مغسولة
1 كوب من حبات الرمان
للصلصه
عصير 2-3 حبات الليمون الحامض
زيت الزيتون 1/4 كوب
الملح والفلفل حسب الذوق
دبس رمان
تعليمات
نحتفظ ببعض شرائح الافوكادو و حبات الرمان للتزين
نخلط كل المكونات في وعاء بلطف عدا دبس الرمان
يضاف دبس الرمان عند التقديم
