Strawberries are everywhere now. Tempting me with their luscious juicy red color. I find it hard to resist them and often come home with strawberries whenever I am out grocery shopping even if they weren’t on the list.
Today’s recipe is my favorite companion to pancakes. Strawberry syrup adds fruity freshness and a sweet note to my favorite pancakes. It is also great as a topping for yogurt, my idea of a great way to start the day. If you are not a big fan of pancakes or yogurt, this syrup makes a wonderful topping for ice cream.
Homemade strawberry syrup
Printable recipe here
2 cups strawberries
1 cup sugar
3/4 cup water
1 tablespoon starch
1/4 cup water
Wash the strawberries and remove the stalks
Mash the strawberries to the consistency you want, I like the sauce chunky with visible bits of strawberries. You can pulse the strawberries in your mixer or food processor if you like the sauce to be smooth.
In a pot place the strawberries, sugar and 3/4 cup of water.
Bring to a boil over medium low heat, stirring every now and then for 10 minutes
When you have 5 minutes left in the cooking time, dissolve the corn starch in the 1/4 cup of water and add it to the syrup while stirring. This will thicken the sauce and give it a beautiful consistency.
Store the left over sauce in a clean dry jar in your fridge, it will last up to two weeks.

/ April 13, 2012This is wonderful- been planning to make some fruit syrups since the store-bought ones always are full of high fructose corn syrup and at least I know what is going in it. I can’t wait until we have local strawberries in season. Also loved the recipe roundup- gave me some more things to try!
Sawsan@ Chef in disguise
/ April 13, 2012Hello Sarah, I totally agree. Anything homemade is far better, healthier and tastier than store bought stuff. No additives, preservatives or artificial colors

/ April 10, 2012What a mouth watering round up! I love strawberries, I pay a high price for them in the off-season just so I can have them on my breakfast every morning. The syrup sounds wondeful over ice cream. The other thing I did with them this year was make strawberry infused vodka. Amazing! If that’s your kind of thing
Sawsan@ Chef in disguise
/ April 11, 2012I love strawberries too and so do my kids. There is so much you can do with them and they are great in every recipe you use them in.
As for the vodka, I am a muslim Aimee, we don’t drink alcohol, even if it is strawberry infused

And thank you so much for including my recipe in such a wonderful round up!
As for the next recipe… I would love all!!! hehehe If I REALLY had to decide… I would go for the drink first, then the labaneh and then the bread… mainly as I have lots of whey in the fridge (and will soon get more)! hehehe <3
Have a great start of week!
Sawsan@ Chef in disguise
/ April 9, 2012I think the exact same thought when I visit your blog, oh how I wish we were neighbours, we’d have so much fun
I will be posting the drink recipe real soon but if you’d like to try it, it is one part yogurt to 4 parts whey and pulse them in the food processor or mixer with a sprinkle of salt, you can also add mint or even garlic. I know it may sound odd but you just have to taste it, it is a very popular, refreshing and healthy drink

/ April 14, 2012THANKS! I have made it today and LOVED it! It is very similar to the savoury version of Indian Lassi, which is a big hit at my house!!! <3 <3 <3
