Have some left over chickpeas and you don’t know what to do with them? have a lonely can of chickpeas in your pantry begging to be used? want a healthy, filling snack?
This salad could be your answer, it was mine when I had some chickpeas left over from making Turkish Pilaf. It is super quick and comes together in no time at all.
P.S. For all of you olive haters out there, I promise this will be the last olive recipe for a while 🙂
chickpeas (out of a can or prepared at home)
Pitted olives, chopped
Green onions (I didn’t have any so I used regular ones)
Chopped fresh parsley
1 table-spoon olive oil
2 tablespoons lemon juice
1/4 teaspoon paprika
1 clove garlic minced
Salt to taste
This salad could not be simpler really..
mix the ingredients of the dressing.
Toss the ingredients of the salad, drizzle the dressing over them, toss to combine
