Middle eastern breakfast, take 3: Wraps

Wraps are quick, easy and the best part is, they make everyone happy! Every family member can gets to choose their favorite filling, no quarreling between 6 year olds and 11 year olds at 8 am on a weekend! A win win situation in my book!

Wraps with a middle eastern flare

Usually made with pita bread but you can use flour tortilla if you can’t find pita bread.

Zaatar wrap

• 2 tablespoons zaatar spice mix

• 2 tablespoons olive oil

1.Drizzle your bread/tortilla with olive oil

2.Sprinkle the zaatar spice mix generously

3.Wrap and enjoy

Halloumi wrap

• 3 slices of halloumi cheese

• 3-4 slices of tomato

• 4-5 mint leaves

• Cucumber slices

• Pitted olives

1.Sear the halloumi by placing it on a grill or a hot pan for 1-2 minutes till the surface is golden brown, flip and cook on the other side

2.Layer the halloumi on your base of choice

3.Add the tomatoes, mint, cucumbers and olives and lettuce leaves

4.Wrap and enjoy

 

Tomato puree and zaatar

•2-3 tablespoons tomato puree (see notes)

•1 tablespoon zaatar

•1 tablespoon lemon juice

•1 tablespoon olive oil

Simply spread the bread with a layer of tomato puree and sprinkle zaatar

Drizzle with lemon juice and olive oil

Notes:

The tomato puree used here is a special homemade type that is thick and tangy. If you don’t have that, the best replacement is to pulse sun-dried tomatoes (the type packed in oil, just drain the oil and pulse them in the food processor until they turn into a paste and use that)

fava bean wrap

Fool wrap

•½ cup canned fava beans washed &drained

•2 tablespoons lemon juice

•1 tomato chopped or sliced

•2 tablespoons olive oil

•1 tablespoon tahini sauce (optional)

 

Directions

1.Mash the fava beans

2.Add the lemon juice, tahini sauce, olive oil, stir to combine

3.Add the chopped tomatoes

4.Spread over your bread base

5.Wrap and enjoy

 

Labneh wrap

2 tablespoons labneh

Mint leaves

Cucumbers sliced thinly

Pitted black olives (optional)

 

Directions

Spread the labneh on your base of choice

Sprinkle with mint leaves and arrange the sliced cucumbers on top

Add the black olives if using
