Mia’s lemon yogurt baked chicken

Today’s guest is one of the wonderful food bloggers I follow. Mia’s domain  is the place where Mia shares mouthwatering pictures and amazing recipes. I love the flavor combinations she uses..they are bold and original and all her own creations..like this wondereful recipe she is sharing with us today..If  you have not been to Mia’s blog before I highly encourage you to, you will not be disappointed.

1 whole chicken
1 cup full cream greek yogurt
1 teaspoon fresh rosemary, finely chopped
2 small garlic clove, minced
1 large lemon, juiced
1 teaspoon paprika
Salt and black pepper

Clean and cut chicken into 8 pieces.
In a large ovenproof deep-sided dish, add yogurt, fresh rosemary, garlic, lemon juice, and paprika. Mix well to combine, further adding salt and black pepper to taste. Save three tablespoons of the marinade to baste the chicken with later (while cooking). Add chicken and coat thoroughly. Arrange the chicken pieces in a single layer, leaving plenty of room in between each piece. Cover and refrigerate overnight.

Remove chicken from refrigerator and allow to sit between 15-30 minutes before placing in oven. Preheat oven to 450 F.

Bake chicken for 20 to 30 minutes or until chicken is fully cooked and crispy, turning and basting chicken generously with the marinade halfway through cooking. Finally, use a brush to baste the chicken again just before serving.  Using the pan drippings will add great flavor and assure a golden brown color. Serve hot.
