Layered red cabbage salad

 

As the weather gets warmer, salads become a must on my table. I like to use different vegetables, different dressings and different presentations to keep things interesting.

This salad is colorful, healthy and crunchy. You can make this ahead of time, prepare your dressing, layer your salad in the serving bowl and forget about it untill it is time to serve it . 

Layered red cabbage salad

Cucumber

1 cup thinly silvered red onion

Sesame dressing (recipe follows)

Finely shredded lettuce

Finely shredded red cabbage

Shredded carrots

Thinly sliced green onions(optional)

2 tablespoons roasted sesame seeds

Sesame dressing:

1/2 cup vinegar

2 tablespoons sugar

1 tablespoon sesame seed

3/4 teaspoon salt

1 tablespoon soya sauce

1 tablespoon sesame oil

Divide the cucumber length wise thin scoop the seeds then slice them thinly (Scooping the seeds is entirely optional, I like to do it because they look nice and become less soggy)

Mix the sesame dressing ingredients and add the cucumbers to them. Let them stand for 30 minutes to 1 hour.

Arrange the red cabbage in your serving bowl followed by the lettuce and the shredded carrots

When it is time to serve Pour marinated cucumber mixture over the top.

Sprinkle with green onions and extra sesame seeds if you want.
