I just happened upon your blog this morning as I was looking for a vegan pancake recipe. I made your Fluffy Pancakes and they were great! I’ve tried countless times to make a decent vegan pancake and they always come out either soggy in the middle and/or totally compressed and flat. These were wonderfully fluffy and tasty – finally I can eat pancakes again. Your blog is beautiful. So many amazing colourful recipes. I’m currently scouring it to see what I can make next.
