I am horribly terribly late in posting my daring cooks and bakers challenges 😦 I make the challenges in time for the reveal but finding the time to sit down and write the post has proven to be an elusive task.So for this week, I am trying to catch up on posting my challenges.
This month, the Daring Cooks challenged us to think inside the box – the icebox, that is! Audax taught us some really cool tips and tricks for stocking our freezers with prepare-ahead meals that can keep our taste buds satisfied even during the busiest of times.

This challenge could not have come at a better time, as we head back to school (I can’t believe how quickly this summer has slipped by) a bit of organization can be a life saver in those busy first few weeks.

When I get my secret recipe club assignment, I go through the blog’s archives focusing mainly on healthy recipes. Salads, and vegetarian categories are usually my first stop. This time things were a little different, I started my archive search with bread and baked goods!
You see, May was a super stressful month.We are moving to the United Arab Emirates in a couple of weeks and despite the fact that I have been preparing for this move for 4 months, the idea has not fully sinked in! The past few months and May in particular have been a hectic race to get everything done and organised in time for the move. I had to hand over my patients at the clinic to another Dr, the kids’ papers and school transfer arrangements, preparing the house, organizing the stuff to be shipped, the list goes on and on, I will spare you the headache and just say that venting through baking seemed like the only sane option.
Beauty surrounded the Daring Bakers this month as our host, Sawsan, of chef in disguise, challenged us to make beautiful, filled breads. Who knew breads could look as great as they taste?
Yup! I was the host of this month’s daring bakers challenge 🙂 and it could not have come at a better time. This month my blog turns 3 and what better way to celebrate the occasion that doing it with homemade bread?
Today is the first day of school after the winter break and we have had an amazing one. My mom, the kids and I took a trip back home to Palestine that I will tell you all about when I sort through all the pictures 🙂
It was a wonderful time to slow down, recharge and reconnect with loved ones and childhood memories.

My relationship with sweet muffins can mostly be filed under the heading “disasters”. For years, I have been looking for a muffin recipe that produced those beautiful domed muffins you usually buy at the bakery. The results are usually either flat cup-cake like things or mini volcanos that spell oven the pan and the oven and result in hours of scrubbing and occasional cursing.
That chapter in my baking adventure finally came to an end this month with the sourdough surprises challenge.
The perfect poached egg. Tender whites around a warm liquid yolk that oozes out like liquid gold when you cut into it. Place it on top of a salad and it turns into a meal. Place it on top of your favorite vegetables and you have brunch. Layer an English muffin with smoked cheese, roast beef and a poached egg and you have a fancy breakfast to rival that served in hotels and restaurants.
If you have never poached an egg before and you are intimidated by it, don’t be. It is much easier than you think. There are just a couple of “secrets” to learn and you will get perfect poached eggs every single time.
