It is the first Monday of July which means that it is time for  the Secret recipe club reveal.

My secret recipe club assignment was Traci’s blog, burnt apple (If you are new to the secret recipe club, you can read more about it here) . Traci shares delicious, budget friendly, natural meals. She loves taking meals and giving them a healthy makeover. That passion started because all three of her children were born prematurely and have had their fair share of eating challenges while young.Her husband had Type 1 diabetes that developed at age four.

Instead of being frustrated like most people would probably be, she became a “master recipe manipulator”.She didn’t want her kids to miss out because of their diet restrictions, so she began making their favorite recipes and adapting them to what they could eat and since she loves a challenge she makes the recipes in a way that is suitable for people who are extra busy and have to work with a tight budget .

This is exactly why I love the secret recipe club. Sure I get to explore many cuisines and try out recipes that I have always wanted to try  (some of my family’s favorite recipes actually came from SRC assignments) but that is honestly not the main part. I love the secret recipe club because it introduces me to wonderful people from all walks of life, from all over the globe.

Every blog has a story behind it of someone with a passion. I have come to learn that great creativity is often the result of some sort of struggle. I am enchanted by people who not only take on the challenge but they do it with such a wonderful attitude.They see the opportunity in the hardship and choose to focus on the silver lining in every dark cloud.

I loved going through Traci’s blog, I book marked her Peaches and Cream Overnight Oats and her Grilled Apple and Pepperjack Cheese Sandwich but since we’re planning a road trip in a couple of days, the kids and I chose her oatmeal raisin energy bites. It only took us 10 minutes to prepare the energy bites and after an overnight stay in the fridge the kids could hardly keep their hands off them. They are sweet but not overly so,the peanut butter made them nutty, the raisins added little bursts of fruitiness.

I love snacks  like these because I know that the kids are not only enjoying something sweet and fun, they are also getting great nutritional benefits

No bake oatmeal raisin energy bites

Ingredients

  • 1 cup rolled oats
  • 2/3 cup unsweetened toasted coconut flakes
  • 1/2 cup nut butter (see notes)
  • 1/2 cup ground flaxseed
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/3 cup honey or maple syrup
  • 1 Tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix all ingredients together until the mix is homogenous
  2. Form dough into golf ball sized balls.
  3. Roll the balls in coco powder, oats, ground nuts if you like

Notes

  1. You can use any nut butter that you like, I used peanut butter but almond butter would work beautifully and so would sunflower seed butter
  2. To store:Place in an airtight container and store in the fridge for 7 to 10 days
    For long term storage: place balls in a plastic freezer bag and freeze for up to three months. To thaw, remove balls from the freezer and allow to thaw at room temperature.
