Waffles! Crisp on the outside, soft on the inside, beautifully golden brown , the perfect way to start the day! But how can you make that even better?
Three words:
sourdough, cinnamon, and fruits
Our sourdough surprises assignment for this month was to make waffles and or pancakes with our sourdough starters but the challenge came with a twist. You must try something different, add in new flavors, work with a different type of grain or try making your own syrup.
I already have a sourdough pancake recipe that I love and make quite often for the kids. They call them Harry pancakes and they actually managed to knock my favorite pancakes right out of the first place  (recipe coming real soon but until then there is a sneak peek at the end of this post).
Sourdough whole wheat waffles
I decided to go for waffles.The official waffle recipe in my house is that for cornmeal ricotta lemon waffles. Trying sourdough waffles has been on my list for quite sometime and the challenge presented the perfect opportunity to do that. To play by the challenge rules I went for a recipe that used whole wheat flour, fruits and cinnamon. Something different in every category and I have to say that the result was simply amazing! As an added bonus these waffles are vegan, and super easy to make. Unlike many other sourdough recipes there is no need for a waiting period. You simply mix everything in one bowl ,heat your waffle iron and breakfast is ready in under 10 minutes!

The fruit I went for is cherry plums, a sweet and sour fruit that looks a lot like blueberries only this one has pits. In Arabic it is called قراصيا and it is usually dried or used to make jam. As the fruit ripens it starts to transform from being overwhelmingly sour to a beautiful balance between sweet and sour. The plums I had were ripe with a slight hint of sour and I thought they would perfectly compliment the sourdough flavor.
These cinnamon sourdough waffles with cherry plums were a huge hit with my entire family and I can’t wait to make them again. If you have your own sourdough starter do give these a try, I know you will love them
Cinnamon waffles

Cinnamon Sourdough Waffles with cherry plums

makes 6 waffles
 
1 cup sourdough starter – 100% hydration – room temp
1/2 cup whole wheat pastry flour
1/2 cup all purpose flour
1 tablespoon cinnamon
2 teaspoons pure vanilla extract
1 cup milk (you can use dairy or non-dairy)
1 cup cherry plums, pitted (you can use your favorite berries or omit them)
Oil for greasing the waffle iron
Directions
 
Turn on waffle iron to pre heat.
Place sourdough starter, whole wheat and all purpose flours, cinnamon, vanilla and milk in a medium mixing bowl.
Stir until well mixed.
Fold in cherry plums.
Lightly oil the pre-heated iron
Spoon the batter onto the machine or waffle iron

Close and cook until the waffles are golden and crisp.
Serve the waffles immediately or transfer them to a rack in the oven to keep warm.
Serve with maple syrup, homemade syrup, fruits or icecream. (Your imagination is the only limit)
