I am a contradiction a perfect imperfection
On looking in from outside
I think I’d pass inspection
My nails are neat, each hair in place

But look a little closer,

And complicated messes
My head is filled with wishes,
My decisions second guesses
There was a time I tried to hide
each wrinkle, scar and tear
But I’m learning to appreciate
That I’m more than I appear
Each wrinkle tells a story
The path from there to here
I’ve earned a little wisdom
With every falling tear
My soul will soar in brilliant skies

Perfect Imperfection

I came across this yesterday and I loved it. It expresses what I feel now adays perfectly 😉 so I thought I’d share it with a question: do you strive for perfection? or do you accept and love yourself as a perfect imperfection?
You know how I am all for scientific research and doing things in the name of science. This recipe is the result of my experimentation to recreate a dish I had at a restaurant once.The combination of spices, the slight crunch of the vegetables and all the colors made this one of my family’s favorite chicken dishes that I prepare often.
I usually serve this with some rice , fried vegetable rice works nicely too
My sizzling chicken
Chicken marinade
3 Skin-less boneless chicken cut into cubes
2 tablespoon mayonnaise
2 tablespoon ketchup
1 tablespoon barbecue sauce (optional)
Juice of half a lemon
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon all spice
Dried oregano
Vegetables
1 onion sliced
1 pepper sliced
1/2 cup mushrooms
1 medium carrot peeled and cut into slices
1/2 cup corn (optional)
1 cup chicken stock
1 teaspoon garlic powder
1/2 teaspoon powdered ginger
1/2 teaspoon all spice
2 tablespoons soya sauce
Instructions
To prepare the chicken
- Mix it with the mayonnaise,ketchup,barbecue sauce, lemon,paprika, salt and all spice.
- Marinate for at least an hour (you can do this over night)
- Add the chicken to a pot over medium heat and stir occasionally until the chicken is done.
- Take the chicken out of the pan and add the onions,saute for 5 minutes.
For the vegetables
- Add the carrots and mushrooms, saute for 3-5 minutes then add the pepper and corn (if using)
- Add the chicken back then the stock, garlic, ginger,all spice and soya sauce.
- Allow to cook over medium heat for 5-7 minutes
