Nutella and apple cinnamon crepe

I was chatting with my friend Rasha the other day and the kids were asking me to make them noodle soup..(you know the type you just pour water over and voala it is ready) .

Rasha found this funny and ironic that the kids of the food doctor (AKA yours truly) would be asking for this when their mum can make a number of yummy snacks and meals from scratch.

So because I totally agreed with her I decided to pamper the kids the following day and make them a special breakfast. In my kids book that is one of three things..Pancakes, crepe or french toast (again please appreciate the irony that their mum is a dentist!). So I gave them a choice and crepes won the day, Nutella crepes to be specific.

I decided to make mine with cinnamon apples..two of my most favorite ingredients

I am glad to report that the kids loved their breakfast but sadly only one crepe made it to meet the Nutella. The rest were eaten hot off the pan interrupted with mmmm and ahhh… 🙂

Crepe recipe (adapted from all recipes)

1 cup  flour

2 eggs

1/2 cup milk

1/2 cup water

1 teaspoon vanilla

1/4 teaspoon salt

2 tablespoons melted butter

1/3 cup sugar

 
In a bowl whisk together the milk, water, eggs and vanilla
 
Add the melted butter and sugar and whisk to combine
 
In another bowl whisk the flour with the salt.
 
Pour the liquid mix over the dry mix and whisk until combined
 
In a hot pan add a little butter, then add about 1/4 cup of the crepe mix and swirl the pan untill the bottom of the pan is covered with the mix.
 
When the crepe moves when you shake the pan , it is time to flip it
Cook it on the other side untill golden brown
 
 
Apple cinnamon crepe
1 apple peeled and finely chopped
1/2 teaspoon cinnamon
2-3 tablespoons orange juice
 
Cook the apples on low heat until soft and most of the liquid is absorbed
