Potato salad..Daring Cook’s June challenge

Jami Sorrento was our June Daring Cooks hostess and she chose to challenge us to celebrate the humble spud by making a delicious and healthy potato salad. The Daring Cooks Potato Salad Challenge was sponsored by the nice people at the United States Potato Board, who awarded prizes to the top 3 most creative and healthy potato salads. A medium-size (5.3 ounce) potato has 110 calories, no fat, no cholesterol, no sodium and includes nearly half your daily value of vitamin C and has more potassium than a banana!

This was truly a fun challenge (thank you Jami). I love experimenting with salads especially potato salad. It is such a wonderful canvas that allows you to create and what’s more it is really good for you.

I came up with four salads for this month , I had 2 more ideas but sadly I didn’t have the time to make them before the reveal date.

Cajun potato salad

Had some Cajun spices left from making the gumbo so I thought I’d use them in a potato salad..the result was heavenly. Just the right amount of spice paired with creamy soft potatoes, crunchy peppers and fragrant basil..in one word..YUM

Cajun potato salad

4-5 medium potatoes peeled cubed and boiled
2-3 teaspoons of the home made Cajun spice (recipe follows)
1/2 red pepper cut into strips
1/2 yellow pepper cut into strips
2 tablespoons light mayonnaise
2 tablespoons greek yogurt
a small bunch of basil

Boil the potatoes in salted water until fork tender
drain them and sprinkle Cajun spices on them while still hot
Add the pepper ,mayonnaise,yogurt and basil
Toss gently to combine
chill before serving..

home-made Cajun Spice

1 tablespoon sweet paprika
1 tablespoon coarse sea salt
1 tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons creole seasoning
½ teaspoon ground allspice

CPM potato salad

Cumin pepper mint salad is my friend’s Rana favorite salad recipe, she says her heart dances when she makes this. One mouth full and you will know why 🙂

3 medium potatoes peeled, cubed and boiled

1/2 red pepper cut into cube

Green onions cut into strips (optional)

Small bunch of mint chopped

Juice of half a lemon

1/4 teaspoon cumin

1/4 teaspoon dried coriander

Salt to taste

Drizzle of olive oil

Mash your boiled potatoes with a drizzle of olive oil, cumin,coriander and salt.

Add the mint and pepper and toss to combine

Warm potato salad

This recipe was one we had in a restaurant and the chef was kind enough to give me the recipe..I love making it at home because it is a refreshing change from regular potato salad

Warm potato salad

3 medium potatoes

10 slices smoked turkey cut into strips

2 tablespoon olive oil

1 small onion chopped

1 tablespoon flour

1 teaspoon sugar

1/2 teaspoon salt

1/2 cup water

1/4 cup vinegar

1 teaspoon mustard

Dash of pepper

1 teaspoon dried oregano

Fresh oregano for decoration

Boil your potato and cut them into cubes

In a pan heat your olive oil and add the sliced smoked turkey and stir occasionally until crisp and golden

Remove the turkey slices from the pan and add the chopped onion,saute until translucent.

Add the flour and stir for a couple of minutes.

Add the water,vinegar and mustard and whisk untill the mix starts to bubble.

Add the oregano and whisk to combine.Turn off the heat

Add the potatoes and 2/3 the turkey and toss to combine.

Transfer to serving bowl and decorate with the remaining turkey and fresh oregano

Turkish potato salad

This amazing salad recipe comes from delicious bite. It is the perfect pairing of tangy yogurt, creamy potatoes, colorful carrots and yummy corn

2 big Potatoes peeled and boiled

dressing

Juice of one lemon
1/2 cup yogurt
3 tablespoons light mayonnaise
1 clove garlic minced
Salt to taste
cumin
paprika
corn

for decoration
1 carrot grated

Mash the potatoes while they are warm (I like to leave them a little chunky)
In a bowl mix the remaining ingredients
Add the dressing to the potatoes with the corn half the corn..toss to combine..arrange in serving plate

In a pan saute the carrots with a dash of cumin for 5 minutes

Decorate with corn and carrots and a dash of dried mint
