Leaning towers of chicken

There is a war raging in my kitchen..

An ugly war that has been going on for a week now. Battles are won and lost on both sides and there doesn’t seem to be an end in sight.

The magnet war!

This hideous war started when I got the kids some toy story fridge magnets.

My eldest insists on placing them high on the freezer door and she spends quite a bit of time arranging them into patterns with stories woven around each arrangement. Her two year old brother insists on destroying her work making his own arrangements but he makes them low on the fridge door..

All day long the kitchen table chairs are dragged to and from the fridge and the magnets do multiple daily trips from the freezer door to the fridge door. Quarrels, occasional bickering and rarely shouting emerge from the kitchen.

I tried reasoning with them.

I got them another set (sesame street hoping to win my son over)

I tried ignoring them but so far nothing seems to work.

I considered throwing out the magnets and in some short fused moments throwing out the fridge.

Sanity still wins the day but I’m not sure how long that will last.

Any one interested in playing peace mediator?

  

Yesterday I had some boneless chicken thighs, zucchini and red pepper in the fridge and one hour get everything ready. A quick visit to google provided me with the inspiration to make this dish.The result was scrumptious.

Chicken that is crunchy on the outside, juicy on the inside, topped with an arrangement of vegetables, cheese and herbs..colorful and delicious

 

4 skinless boneless chicken thighs (you can use breasts if you like)

Italian seasoning bread crumbs

2 eggs

2 tablespoons vinegar

3 zucchinis sliced

1 red pepper cut into slices

1 onion cut into strips

2 tablespoon butter

2 tablespoon olive oil

1/2 teaspoon dried basil

1/4 teaspoon marjoram

Salt

Swiss cheese

Mozzarella cheese

Parmesan cheese

1 Tomato sliced

 

 

In a bowl beat the eggs with the vinegar

In another bowl place your bread crumbs.

Dunk your chicken breasts in the eggs then in the crumbs, arrange them on a plate then place them in the freezer for 15-30 minutes.

Do the same process with your zucchini

Melt the butter in a pan, add the olive oil.

Add the chicken and cook until golden brown on both sides, set aside.

In the same pan cook the zucchini until golden brown on both sides, set aside.

Add the red pepper and onion to the pan and sauté for 5-7 minutes.

Add the basil, marjoram and a dash of salt and stir for 2 more minutes.

To assemble your leaning towers

Drizzle some oil on a baking sheet, layer the chicken topped by a slice of Swiss cheese.

Next place one tomato slice per chicken peace.

Top that with 2 zucchini slices and top with onions and peppers.

Sprinkle parmesan and mozzarella on top.

Cook in the oven for 15-20 minutes to allow the flavors to come together and the cheese to melt
