Zaatar and cheese muffins

This is my favorite savory muffin. I usually bake a dozen of these and stash them in the freezer. They make a wonderful breakfast  or afternoon snack. All I have to do is to take them out of the freezer and zap them in the microwave, make a cup of tea and breakfast is served.

The exterior will be golden brown and crunchy while the center will be soft and chewy. You can also make this as a loaf and slice it or you can spread it in a pan and cut it into bars.

herb and cheese muffins

3 cups all purpose flour

1 cup powder milk

One and a half cups fresh oregano

One and a half cups chopped nabulsi  cheese (or any cheese that is firm and holds its shape)

1 egg

3 teaspoons dry yeast

1 teaspoon sugar

1/2 cup olive oil (you can use any vegetable oil you like)

1 cup warm water

1 teaspoon vinegar

Place the oven rack in the middle and heat the oven at 190 C

Proof the yeast (this means make sure your yeast is active and to do that mix the yeast with the sugar and warm water and wait untill it foams and bubbles)

In a bowl mix the powder milk with the flour.

Add the olive oil and rub it into the flour mix untill the flour absorbs the oil and resembles wet sand

Add the egg then the vinegar (you can beat the egg with the vinegar then add it to the flour)

Add the oregano and cheese.

Add the proofed yeast and stir with a spatula or wooden spoon (the dough will be really sticky resist the temptation to add flour )

Allow the dough to rest for 1 hour, covered, in a warm place

spray your muffin pan with oil then sprinkle it with flour

Using two spoons drop the mix into the muffin pan

Bake for 30-40  minutes (or untill the rim starts to turn golden brown)

Place under the broiler untill golden brown

Allow it to cool for 2-4 minutes then take it out of the pan and cool on a wire rack

مفن الزعتر و الجبنه النابلسيه

3 كوب طحين متعدد الاستعمالات

1 كوب حليب بودره

كوب و نصف اوراق زعتر اخضر مغسوله و مجففه

كوب و نصف جبنه نابلسيه مفرومه

بيضه

3 ملاعق صغيره خميره فوريه

ملعقه صغيره سكر

نصف كوب زيت زيتون

1 كوب ماء دافيء

ملعقه صغيره خل

نخلط الماء و السكر و الخميره

في وعاء نخلط الطحين وحليب البودره الزيت و البيضه والخل نفركه باطراف الاصابع حتى يتشرب الطحين الزيت و البيض

نضيف الزعتر و الجبنه

نضيف الماء المذاب فيه الخميره تدريجيا مع العجن حتى يتجانس العجين

نغطي العجين و نتركه يتخمر مده ساعه

نزش صينيه خبز الكب كيك بالزيت و الطحين

نوزع العجين على 12 مفن

نخبزه في وسط فرن محمى سابقا على 190 حتى تتحمر الاطراف ثم نحمره من اعلى
