Citrus mint ice tea

Strange how a teapot can represent at the same time the comforts of solitude and the pleasures of company.

I was updating my recipe index when I realized I haven’t shared any drink recipes.

Since spring this year ended up being  a battle between winter- that doesn’t  seem to want to leave- and summer – that is too eager to arrive- I will start with my favorite ice tea recipe because at the moment summer is winning with a whooping 34 C.

6 bags of Earl gray

2 cups boiling water

3/4 cup sugar

1/2 teaspoon baking powder

4-5 cups cold water

1 orange sliced

1 lemon sliced

5-6 springs fresh mint

Sprinkle the baking powder in a bowl and add the tea bags followed by the boiling water and allow it to infuse for 15 minutes.

Remove your tea bags and add the sugar and stir until it is completely dissolved.

Add the cold water and stir.

In a container you can place in your fridge place the mint and the orange and lemon slices.

Add the tea and allow to infuse in the fridge over night.(The longer it stays the better it stays)

Notes

I like to use Earl grey tea because it already has that Citrus hint  but feel free to use whatever tea you like.

The addition of baking powder may seem odd but it serves double duty: it keeps the tea clear and cuts down on bitterness. Rest assured you will not taste it or any hint of it in your ice tea.

The amount of sugar you add depends on how sweet you like it to be. I fond this amount perfect for my taste and my family’s.

The amount of cold water again is up to you..if you like your tea strong keep it to 4 if you like it milder use 5
