Date and walnut pudding cake

I promised you a delicious treat yesterday and to quote one of my favorite fictional characters Richard Cypher..

Promise made… promise kept  (with 10 minutes to spare before midnight lol)

If you guessed it was a brownie or something chocolate related…you already know from the title that you guessed wrong but I promise you this is even better.

I’ve had this recipe for years, I don’t even remember where I got it from, probably from cooking light but I’m not sure. What I am sure of though is that I’ve made it enough times to know it by heart. It is one of my  family’s favorite recipes, it is super easy to make and it is actually good for you with the dates walnuts and all.

What I love about it is how spongy the cake turns out, not to mention that the blend of cinnamon cardamom and nutmeg along with dates  is simply out of this world and to top it off  the water you add at the end transforms into an amazing sauce. Add a scoop of vanilla ice cream and you have one dessert you will not forget..

The cake has no eggs, so it makes a perfect way to satisfy a sweet tooth if you are vegetarian or vegan (use margarin instead of butter)

Date and walnut pudding cake

1 and 1/4 cups flour

1/3 cups brown sugar

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/8  teaspoon nutmeg

1/4 teaspoon cinnamon (optional)

1/4 teaspoon cardamom (optional)

1/4 teaspoon salt

1/2 cup walnuts

1 cup boiling water

1 teaspoon vanilla

1 cup dates (pitted and chopped)

3 tablespoons butter or margarine

1 and 1/2 cup boiling water

1 cup brown sugar

Add 1 cup boiling water to the dates and butter.

Let it stand for 15 minutes then try mashing the dates with a fork. Then add salt, nutmeg, cinnamon. cardamom and vanilla.

In another bowl mix flour, baking powder, baking soda, 1/3 cup brown sugar, walnuts.

Add the date mixture to the flour mixture and stir to combine.

Pour in a non greased pan (don’t worry it won’t stick).

In a bowl dissolve 1 cup brown sugar in 1 and 1/2 cups boiling water  then pour them over the cake. (Dont worry..it is written correctly…pour water on the cake… I haven’t gone mad!…yet!) 

Bake in an oven that you have heated to 180 C in  the middle rack for about 45 minutes. (The period of time may differ from one oven to the next but you will know it is done when you insert a knife in the center and it comes out clean)

When you take it out you’ll see that the water you added OVER the cake transformed into a sauce UNDER it

 When you cut into the cake and take a piece out, you’ll find a lucious sauce under it.. it is DELICIOUS

Notes

You can serve this warm or chilled it tastes amazing both ways but when you chill it the sauce thickens quite a bet.

This is not a cake to take out whole of the pan you can cut it in the pan and take it out in pieces.

You can serve this with icecream, whipped cream or as is…it is yummy in any way you try it
