Red bean rice salad

This salad is  one of my all time favorites…colorfull, healthy, easy and a great way to use up left over rice (which for some reason, I’m always stuck with!)

Now before you frown at the use of yogurt in the dressing, you can by all means replace it with mayonnaise but before you do that, I have to tell you that yogurt and rice are a match made in heaven. The creamyness of the yogurt and the slight sour taste compliment the rice beautifully. Besides, it is healthier for you.

 

boiled rice (or left over rice)

red beans (kidney beans)

pitted black olives

corn

chopped parsley

for the dressing

juice of half  a lemon

1 tablespoon yogurt

2 tablespoons mayonnaise

1/4 teaspoon garlic powder

pinch of salt

 

Combine the dressing ingredient…set aside. This gives a chance for the mayo and the yogurt to take up the flavors of the garlic and the lemon

Toss the salad ingredients add the dressing…mix…serve…enjoy
